Meet the Maker

Bill Perez spent over 20 years mastering operations and facilities from managing luxury resorts as a Facilities Manager to leading nationwide dining projects as a Project Manager and serving as Chief Engineer for many major complexes across Southern California. Today, he’s channeling that precision and hustle into cold-smoking bold, unforgettable cheese in Oceanside, CA. Dafuggincheeseguy isn’t just a brand it’s artisan attitude, flavor swagger, and a whole lotta smoke.
